I made these for dinner last evening, using crab meat picked from Saturday’s leftover crabs. The recipe is Scott’s grandmother’s, and it’s a real crowd pleaser.
Ingredients:
12 ounces crab meat (I used lump, backfin, and claw from about eight crabs, but you can use canned – drained well)
5 tablespoons butter
1 tablespoon Miracle Whip
1 tablespoon Old Bay seasoning
1 jar Kraft Old English cheese spread
1 package of 6 English muffins, split (I lowered the calories a little by using Thomas’ new Triple Health muffins – 100 calories per whole muffin, as compared to 120 calories in the “original recipe”)
Directions:
Melt butter in a medium saucepan over very low heat. Stir in Miracle Whip and Old English Cheese until well blended. Remove from heat and gently fold in crab. Place a small scoop of mixture on each of twelve muffin halves. Spread lightly with a spatula. Season with Old Bay seasoning. Place on a cookie sheet and bake in a 400 degree oven for 15-20 minutes or until golden brown on top.
Cool slightly (they will be super HOT) and enjoy!

Those look like perfect crabbies. You know I’d never figured out how to eat crabs until I went down to N. Carolina. There’s a place called Dirty Dicks that’s supposed to have the best around. I was traveling on my own & told the waitress that I’d love to try the crabs but didn’t know how to do them. She got my extra large order, sat down at the table with me & showed me where to get the meat from, chatting all the time. Then when I got up to leave, she said no charge – first time customer & hope I’d come back. And I did… but now I’m not sure I remember how to get the meat out.
Such hospitality at Dirty Dicks! That was nice of her. I’ve been eating crabs since I lived in Baltimore, MD, my first year out of college (and for almost a decade total). Scott and I’s first date was to a crab house….where he was “impressed” by my willingness to dig in and get guts and gore up to my elbows!
I thought so since you seem to know your way around a crab. But I did notice that it’s a lot more mess than lobster. Dirty Dicks provided me with a huge pile of napkins – and it was fun sitting chatting with the waitress.
Yes, lobster is a lot cleaner…chewier, too, not that I mind. We used to vacation in Ogunquit, ME when I was a kid, and then my mom, Scott, and I made two trips up before the boys were born. Love me some lobster roll!!!!!
