I have eaten many (I mean a WHOLE LOT) of lemon squares, and I’ve tried at least three recipes for making them at home, and this is my favorite (over bakery-bought, even). Thank you’s go out to Bonnie at Recipes Happen for sharing this wonderfully easy family (her family, to be specific) recipe.
Crust: 3/4 cup soft butter, 1 1/2 cup flour, 1/3 cup powdered sugar — mix (I used a pastry blender/cutter) and press into a greased 9×13 pan and bake at 350 for 15 minutes.
Filling: 3 beaten eggs, 1 1/2 cup sugar, 1/4-1/3 cup lemon juice, 3 tablespoons flour, 1 tablespoon grated lemon rind — blend with hand mixer, pour over warm crust, and bake 20 minutes
Dust with powdered sugar — cool completely and ENJOY!
My main problem with making lemon squares has always been the CRUST. It always crumbles on me, and I’ve never been able to actually PICK UP one of my lemon squares. This crust set up perfectly, cut nicely for serving, and holds together when you pick one up by hand. Love!
Better keep this recipe on hand. My husband would love it!!!

i saw lemon squares my favorite dessert, then I saw my name, and I had to take a second look like… woah is she talking about me. But then I realized I do not write on recipes happen.
So funny — small world, name-wise.
Indeed because there are only five Bonnie’s out there. I counted once. Ok maybe more, but really not very many.

Problem crust or not, it looks VERY good! Going to have to try this at home!

Oh, my first post that I read coming back from vacation & it’s great! I agree with you on the crust part & will have to give this a try… right after I finish the next 8 loads of laundry.
Welcome back! Read anything good? (Recommended my me or not – ha ha). These were SO yummy that I pretty much ate two or three every day until they were gone! I know I did 24 hours of laundry (at least), when we got home from the beach. Have fun with that!
I was only able to finish the Russo book, Risk Pool which was a VERY BIG book. Laundry? OMG! We rented a condo at a really nice resort but it had a mildew problem. Since we had to bring down towels, sheets, & of course our clothes I just finished off load #12 because everything smelled so bad.
Oh! That’s the worst — a hate that wet, mildew smell. I hope you were able to get it out of your stuff 🙂
Laundry – done! Tide & Downy took care of everything except I think I’m just going to toss the pillows out.
