The whole impetus for the creation of this salad came from one of my favorite bloggers, Photographs and Recipes. The key bit, the dressing, comes straight from her recipe. Hrmmm, I’m realizing I took this picture before putting any dressing on. Oops. Imagine a lovely balsamic honey vinegrette, okay?

Salad Ingredients:

spring mix (I used Dole)

fresh strawberries, sliced

blue cheese crumbles

golden raisins and glazed pecans (Fresh Gourmet brand)


Whisk together…

3 Tablespoons olive oil

1 teaspoon honey

1 teaspoon Dijon mustard

1 Tablespoon balsamic vinegar

Drizzle on salad and enjoy!

**I also added sliced grilled chicken breast to Scott’s, making it like one of his favorite restaurant salads**
